Herbal thyme melds into baking spices—cloves, ginger, maybe cinnamon—and the whole lies happily on top of dark bread, toast, toffee, and caramel. Dried fruits—the usual cherries and plums, dates and figs; hints of citrus—dance in the periphery and the interstices; earthy-grassy bitterness emerges through the middle into a surprisingly dry finish. Hints of rum and brandy.

Impressively light-bodied for a beer as big as this (10% ABV), with good carbonation and basically no alcohol presence. Cleansing and scrubbing, a bit of stickiness around the finish.

Yum! A tasty and drinkable beer, big enough that it's probably best to treat it as a sipping beer. Intense as heck and stupidly complex, definitely balanced, entirely integrated. Beautiful as the holiday season starts to recede into the distance. The folks at d'Achouffe clearly know that they're doing. Highly recommended, if a little late for this year.
