Pale fruits--pears, apples, white grapes--up front, but very dry; some gently-roasted white bread around the edges. Grassy-floral bitterness emerges, especially on the finish, with the faintest mineral touch. Spices flicker gently past.

The beer is very light-bodied, with massive carbonation. Very dry and clean; refreshing and cleansing.

Pretty much the inspiration for american craft brewers that came to love and brew saisons. I have no idea how I managed to go this long without taking notes on this beer. Startlingly drinkable; intense and integrated and complex. I've tried it with food, and it's promiscuous almost to the point of sluttish in food-pairing. A small miracle in a bottle.
