Tonight's beer: Firestone Walker Parabola (2012)
Vanilla and chocolate to start, coffee coming right behind with caramel and dark bread and toast in tow. Earthy-grassy flickers around the periphery. A dim burnt-fruity glow, then the beer reverts to massive roastiness. Vague impressions of smoke and peat around the finish.
A tad on the light side of medium-bodied, decently carbonated. A bit of bready chewiness and syrupy stickiness. Some boozy warmth and prickle, a bit subdued for 12.5% ABV—I think that was mellowed some with age.
A delicious very big stout that has matured into something truly astonishing. Intense and staggeringly complex; integrated and balanced; astonishingly drinkable. I think I remember being disappointed by this beer when it was young, but adding a year to this was worth the wait.
