Flying Dog Single Hop Simcoe Imperial IPA


A slow and almost subtle wave of piney-citrussy bitterness builds, eventually breaking in a spray of grapefruit and lemon; a skin of flowers and grass remains behind. There's some caramel and pale toast and bread around the edges, maybe some simpler sugar-sweetness lurking. Then, the beer dries out suddenly and completely.

Bready and medium-bodied, nicely carbonated. Lots of resinous-syrupy stickiness. Eventually, slowly but completely drying, but too bit to be refreshing—enough booze for a detectable prickle and sizzle, but not unpleasant.

A very nice Double IPA, with lots of complexity from the one hop used. Intense as heck, and very well-balanced and integrated. The 10% ABV is present and accounted for, but not overwhelming or anything negative. Simcoes aren't my kryponite hop (Centennials are) but the hops character is well-represented, here. Another excellent beer from Flying Dog.
