Tonight's beer: Brasserie Fantôme Fantôme de Noel
Lots of spice—some bright and grassy, some earthy—coriander and juniper and ginger and galangal and allspice and nutmeg and maybe cloves—and plenty of bitterness to go along, earthy and floral and grassy, too; strong hints of black pepper. Dark bread, toast, caramel, eventually chocolate emerge around the middle, along with threads of dried/candied fruits: pears, plums, cherries, apples, maybe a flicker of citrus. Bitter, then a little sweet, then very, very dry.
Surprisingly—startlingly—light-bodied, with lots of carbonation; drying, cleansing, scrubbing, and refreshing. Remarkably little alcohol presence, considering the 10% ABV.
A very impressive big dark-ish Saison; it evolves as it warms: the spice and the bitterness step back quite a bit. Powerfully intense and staggeringly complex, masterfully well-balanced and integrated; drinkable as hell, supple and subtle and graceful. The beer has plenty of spicy hooks and the horsepower to dance with Indian food. Delicious.
