Stillwater Artisanal Why Can't IBU?


Complexly and intensely bitter to start, mainly lemons, some grapefruit and orange; flowers; grass; some pepper and bright spice (like coriander). A little bready and fruit-juicy sweetness around the middle. Dries out sharply and extensively by the finish.

Very light-bodied, well-carbonated. Intensely drying, cleansing, scrubbing to the point of scouring; impressively refreshing. Just a touch of chewiness.

A delicious and very drinkable beer, with some of Stillwater's house character but definitely on the pale and hoppy side. Plenty intense and complex—especially for 5.7% ABV—and distinctly poised if not particularly balanced. Definitely well-integrated and exactly what the brewer intended. I'm a big fan of this brewery, and beers like this are why.
