Tonight's beer: Ninkasi Total Domination
Citrus explodes to get things started, with flickers of grass and flowers and pine. Some pale-bready caramel sweetness makes for a sturdy but subdued counterpoint. Juicy, then bitter, then a little sweet, then impressively dry.
Medium-bodied, decently carbonated. Scrubbing and scouring, searingly drying. Eventually, pretty refreshing. A trace of resinous stickiness into the finish.
An aggressive but drinkable IPA (and slightly old; I'd bet it's even more aggressive fresh). Tons of complex and intense flavor, nicely integrated—seems to be exactly what the brewers intended—but nothing like balanced: the malt seems mainly to throw the hops into stark relief. Tasty, and well worth having shipped here from the Northwest.
