Tonight's beer: Southern Tier 2XONE
Musky-floral-tropical bitterness up-front, with threads of grass, pine, citrus. A little bit of pale-bready sweetness in the background, just enough to throw all the complex hoppy bitterness into stark relief. Dries out quickly and thoroughly.
Medium-bodied, nicely carbonated. Drying, cleansing, immensely refreshing. Not much hint of the 8.1% ABV. Plenty of resinous stickiness into the aftertaste, along with an almost-pulpy juiciness.
Yum! A delicious beer that gets a stunning amount of complexity from a notably simple recipe—one malt, one hop variety. Intense as hell, remarkably well-balanced for the style. Incredibly drinkable, supple and subtle. I'm curious as to whether Southern Tier will brew this again (I hope so) and if they'll use Mosaic hops again.
