Ninkasi Total Domination

Tonight's beer: Ninkasi Total Domination

Ninkasi Total Domination

Lots of bitterness to open: citrus and pine, flowers and traces of grass, maybe a flicker of musk or melon or tropical fruits. Pale bread solidly in the background with soft smears of caramel and possibly dried fruit. Maybe a sprinkle of bright baking spice. Bitter, then dry like the Sahara.

Light-bodied, briskly carbonated. Drying, scouring, scrubbing, immensely refreshing. A trace of resinous-syrupy stickiness into the finish.

A tasty IPA, suitably unbalanced and light-bodied for a West Coast version of the style. Intense and complex and entirely unified; impressively drinkable. I've had some superb beers from Ninkasi—they're my sort of nerds—and this is another one.
