Paulaner Salvator and Pork Chili with Invisible Apples


The beer is Paulaner Salvator (a doppelbock, for those as don't know the beer) and the food is our own chili de chancho with manzanas invisibles (pork chlii with invisible apples).

The beer is malty-sweet, with nuts and toffee lurking in the background; there's some earthy bitterness around the fringes. It turns out, the sweetness makes it play well with the pork when used as most of the liquid in the chili, and balances the spice from the chili peppers (there are twelve in the chili). The apples (four, cooked entirely into the liquid) added a little sweetness, but turned out to be more pleasantly tart than anything else. Crema and shredded cheese made for awesome garnishes.

An excellent meal, which just happened to make lunches for us for all of next week (a bonus).
