Spencer Trappist Ale


Pale bread, hints of caramel and maybe toast. lots of bright pale fruits—pears, apples, white grapes, peaches, apricots—mostly dry, though. Maybe a scrim of woody spice, then floral-grassy bitterness carries the beer into a  quick, short finish.

Light-bodied; lots of fine, dense carbonation. A little bready softness and chewiness. Gently drying, very refreshing; mostly clean and quite cleansing.

A superb beer, entirely in keeping with the excellence one comes to expect from Trappist breweries. Surprisingly intense and complex, especially given the relatively mild 6.5% ABV (it would probably pass as a tripel); wonderfully well-integrated and balanced, poised and supple and subtle and graceful. Astonishingly drinkable. Well worth the seeking out, if the style suits.
