Boulder Emergent

Tonight's beer: Boulder Emergent

Boulder Emergent

Grassy-floral  bitterness, threaded densely with mostly-lemony citrus, bright spice, hints of peppery wheat. Some pale bread in the background, maybe a touch of caramel. Starts steeply bitter, then flips to sharply prickly-dry.

Very light-bodied, lots of fine prickly carbonation. Massively drying and refreshing. A little bready stickiness, mostly clean and cleansing and scrubbing.

A pretty impressive White IPA, really. Lots of bitterness, but the witbier character is amply evident. A ton of intense, complex flavor going on, nicely balanced. Imposingly drinkable, and a beer that goes plenty well with food, though it's probably happier playing as an IPA in that context than as a wit. I don't grab stiff from Boulder all that often, but they usually do very good work.
