Tonight's beer: Spencer Trappist Ale
Pale dried fruits (mostly pears and apples, some white grapes and maybe bananas) layered on very pale bread and a little caramel. Grassy-floral bitterness, flecked with bright spice, emerges quickly, then the beer dries out steeply and thoroughly.
A bit on the light side of medium-bodied, with some good carbonation. A little stickiness around the finish, but mostly clean and cleansing and drying and refreshing.
A very tasty saison, a moment of serenity in a glass. Plenty intense, nicely complex; balanced and integrated and superbly drinkable. Lots of hooks here to pair with food. Very worthy of that hexagonal insignia on the label.
