Tonight's beer:
Opens with a flickering flash of grassy-floral bitterness, with threads of coriander and cloves and pepper. Pale-bready sweetness emerges into and through the middle, smeared with pale dried/candied fruits: pears and apples and white grapes; grace notes of honey and caramel. Bitterness reappears at the finish as the beer snaps directly to dry.
Very light-bodied, highly carbonated. A little thin stickiness but mostly clean. Quickly cleansing, massively drying and refreshing.
Wow! On the one hand, my first thought on opening the bottle was that by "Classic Saison" these folks meant "We wrangled the yeast from a bottle of Dupont." On the other hand, the beer is delicious, so ... who cares? Smells just like Vielle Provision, tastes similar but not identical. Intense and startlingly complex, gloriously balanced and well-integrated. Magnificently drinkable, supple and graceful and subtle. A beer I'll grab again if I see it again.
