Flying Dog Salt and Pepper Tripel

Tonight's beer:

Flying Dog Salt and Pepper Tripel

Fruity-sweet to begin, pears and apples and white grapes; bread and caramel and toast right behind. Peppery-prickly heat emerges in the center, backed by spicy-grassy-floral bitterness. Dries out quickly and completely through the finish.

Light-bodied and well-carbonated, lots of prickle and heat. Powerfully drying, gradually clean and cleansing, eventually drying. Very little alcohol presence for 8.2% ABV.

This is a delicious and highly drinkable example of the style, with the pepper mostly noticeable as prickle and as heat; the salt is more subtle. Intense as heck, and astonishingly complex, nicely balanced and integrated. A thoroughly nifty beer from a local-ish brewery that I'm happy to support.
