Tonight's beer:
Opens with a flash of fruity-bready sweetness, then a wall of bitterness collapses across the palate: musk and cat's pee (love those Simcoe hops) backed y pine, grapefruit, lime, grass, and flowers. Sweetness reappears briefly around the middle, then the beer dries out steeply and pretty thoroughly. Earthiness lingering into the aftertaste.
Just about medium-bodied, pretty decently carbonated. Some surprising roundness, a bit of boozy tingle and prickle, then finishes gently drying and cleansing.
A pretty tasty IPA, dominate (at least at first) by the Simcoe hops. Poised and graceful, if not particularly balanced. Supple and poised and graceful. Wonderfully well-integrated and pretty clearly intentional. Also, really local; so, a complete win.
